• 4 slices italian bread, cut in 1/2 inch cubes (to make 2 cups) • garlic-flavored cooking spray or olive oil • 8 cups gourmet salad greens • 1 cup fresh bean sprouts • 1 cup grapefruit sections (about 1 grapefruit) • 1 avocado, peeled an cut into 12 wedges • 1 cup nonfat honey-dijon mustard salad dressing
Preheat oven to 400 degrees.
Arrange bread cubes in a single layer on a baking sheet and coat lightly with cooking spray. Bake 8 minutes or until golden; allow to cool.
Combine salad greens and sprouts. Arrange salad greens mixture on each of 4 plates; top each with grapefruit sections and avocado wedges. Drizzle dresssing evenly ove salads; top with croutons. Serves 4.
