Black Walnut Apple Salad

*This is my mother's (Nova McCarthy) recipe. She always made this at holidays and it is soooo gooood! The marshmallows melt into the dressing and make a sweet, tangy MO style waldorf salad. My sister in law and I can eat the whole bowl by ourselves. I hope you try it. Colette

BLACK WALNUT APPLE SALAD

6 large McIntosh apples. Peel 3 of them and core and dice all 6
1 TBSP lemon juice
1 cup dark raisins
1/2 cup finely diced celery
1/2 cup black walnut pieces
2 cup mini marshmallows
1 cup salad dressing (like Miracle Whip)

In a large mixing bowl, toss apple pieces in lemon juice to prevent discoloration. Combine all remaining ingredients and mix together well. If mixture seems dry, add a bit more salad dressing. Cover with plastic wrap and refrigerate at least 4 hours, before serving. Stir once more before serving.

Serves 8-10
