4 c. cubed, peeled potatoes 3 chopped, hard cooked eggs
2 celery ribs, thinly sliced ½ c. sour cream
¼ c. chopped green onion ½ c. mayonnaise
2 T. vinegar 2 T. sugar
1 tsp mustard ½ tsp. salt
¼ tsp. pepper
Boil potatoes for 20-25 minutes or until tender; drain. Put in large bowl; add eggs, celery and onions. In small bowl, combine remaining ingredients. Pour over potato mixture and toss to coat. Cover and refrigerate for at least 1 hour.
