Strawberry Spinach Salad


This is one of our favorite salads...we eat it all the time in the summer. My dear husband, Larry, loves this an so do I! You can make a meal of it. Hope you try it!

Strawberry Spinach Salad

------------------------------------------------------------------------

1 tablespoon poppy seeds
1/3 cup Splenda
1/2 cup olive oil
1/4 cup balsamic vinegar
1/4 teaspoon paprika
pinch kosher salt
1/4 tsp black pepper

10 ounces fresh spinach -
rinsed, dried and torn into
bite-size pieces
1 quart strawberries -
cleaned, hulled and sliced
1/4 cup pecans, toasted*
1 small red onion, sperated into rings

Directions
*To toast pecans, place on foil in a 400*F oven. WATCH THEM CAREFULLY! Leave in only about 2 to three minutes. If you open the oven door and smell
the nuts, they are done! Nuts have a very high oil content and can burn in a flash...be very watchful of them! Let cool before putting in the salad.

1 In a medium bowl, whisk together the poppy seeds, Splenda,
olive oil, vinegar and paprika. Cover, and chill for one hour.

2 In a large bowl, combine the spinach, strawberries and
pecans. Pour dressing over salad, and toss. Refrigerate 10 to
15 minutes before serving.

Here's another one that I have:


STRAWBERRY SPINACH SALAD


6 cups torn, well washed spinach leaves


3 cups sliced fresh strawberries


1 green onion, sliced (greens & all)


1/2 cup toasted pecan halves


DRESSING


1/2 cup vegetable oil


1/4 cup balsamic vinegar


1-2 T. Splenda (or 1/3 cup Sugar)


1 tsp. poppy seeds


Salt & Pepper


DIRECTIONS:


Place all dressing ingredients into a small screwtop jar and shake well. Dressing keep in refrigerator for 1 week.


To toast pecans, place in one layer on a cookie sheet and bake in 350*F oven for 5-10 minutes. Do not allow to burn.


Combine salad ingredients, sprinkle in cooled pecan halves. Drizzle dressing over salad and toss until all leaves are coated.


Serve immediately. Serves 6
