2 (15-ounce) cans black beans, drained 2 green bell peppers, julienned 1 tomato, cut into wedges 1 red onion, finely chopped 1/3 cup olive oil 3 Tablespoons lime juice 2 teaspoons chopped parsley 1 teaspoon salt 1/2 teaspoon red pepper flakes
TO PREPARE:
Combine the black beans, green peppers, tomato and onion in a bowl, stirring gently to mix. Pour a mixture of the olive oil, lime juice, parsley, salt and red pepper flakes over the bean mixture, tossing to coat. Marinate, covered, in the refrigerator for 6 hours or longer. Stirring 2 to 3 times. Spoon onto a lettuce lines serving platter.
HINT: Serve with tortilla chips and nacho sauce for an easy low-calorie lunch.
