Mustard Sauce


If you're not wild about mayo, here's a substitute you'll love. Jazz it up with your favorite herbs.

Mustard Sauce

Ingredients:



  • 2 egg yolks
  • 1 tablespoon mustard
  • 1 tablespoon vinegar
  • 1 cup skim milk
  • Tarragon, basil, parsley, or chives to taste
  • Salt and pepper to taste

Preparation:
1 - Mix all ingredients; stir in a double boiler (about 5 minutes), let cool.
2 - Serve this sauce as a substitute for mayonnaise or as an herb sauce by adding different herbs.

Yield:
4 servings

Nutritional Information:
Per serving: 52.5 Calories, 3.5 protein, 3.4 g carbohydrate, 2.3 fat, 0.7 mg vitamin C, 89 mg calcium. Calories from fat: 39%.
