2/3 cup sugar 6 Tablespoons cake flour 1/4 teaspoon salt 1-3/4 cups milk 2 egg yolks, lightly beaten 1-1/4 teaspoons vanilla extract 1/2 cup whipping cream, whipped 3 bananas, sliced 1 baked (9-inch) pie shell Juice of 1/2 lemon Whipped cream 1 Tablespoon grated orange zest
TO PREPARE:
Combine the sugar, cake flour and salt in a double boiler and mix well. Stir in the milk. Cook over hot water until thickened, stirring constantly. Cook for 15 minutes longer, stirring occasionally. Add a small amount of the hot custard to the egg yolks and mix well. Stir the egg yolk mixture into the hot custard mixture. Cook for 2 minutes, stirring constantly. Let stand until cool. Stir in the vanilla. Chill, covered, in the refrigerator. Fold in the whipped cream. Layer the custard and bananas in the pie shell. Drizzle the lemon juice over the bananas. Garnish with additional whipped cream and sprinkle with the orange zest. Chill until serving time.
