from Tell Me More, A Cookbook Spiced with Cajun Traditions and Food Memories
INGREDIENTS:
1/2 pound fresh sliced mushrooms 2 Tablespoons butter or margarine 4 eggs 1 cup sour cream 1 cup small curd cottage cheese 1/2 cup grated Parmesan cheese 1/4 cup all-purpose flour 6 – 8 drops Tabasco 2 cups (8 ounces) shredded Monterey Jack cheese 1/2 cup chopped cooked ham
TO PREPARE:
Saute mushrooms in butter in a medium skillet until lightly browned; drain well and set aside. Combine next seven ingredients in an electric blender. In a large bowl, combine egg mixture, mushrooms, ham, and cheese. Pour into a 10 inch quiche dish. Bake at 350 degrees for 45 minutes or until top is firm. Let stand at least ten minutes before serving.
NOTE: This can be served at room temperature also.
