Some days, when I haven't planned dinner, my husband and I pick up one of the hot, roasted chickens at the supermarket deli. We eat most of the white meat (first meal), and I put the rest in a pot of water and boil gently for a few minutes. I debone
the remainder of the meat, and there is usually enough to make chicken salad for lunch (second meal). The rest I add back to the stock, along with vegetables, canned tomatoes and tomato paste for an easy homemade soup -- enough for two meals (meals three and four). I enjoy this meal stretcher so much that, to save even more money, I buy my own whole chicken and place it in the slow cooker. Oh, and the skin and waste meat I have when I debone the bird goes to the dog (fifth meal). -- Jeanie W., Florida
