Frosted Banana Cookies








Frosted Banana Cookies 






3/4 cup shortening or margarine
3/4 cup sugar
1 egg
1/2 tsp. vanilla
2 mashed bananas
1/4 tsp. salt
1 tsp. soda
2 cups sifted flour


Frosting:


6 Tbsp. brown sugar
4 Tbsp butter or margarine
4 Tbsp cream or evaporated milk
Confectioner's sugar
1/2 tsp. vanilla extract


Cream shortening. Add sugar and blend. Add egg, vanilla and bananas. Sift together flour, salt and soda. Place by teaspoons on greased sheet. Bake at 350 degrees of 8 minutes. (These only brown on the edges.)


Frosting: Place in pan and bring to a toil brown sugar, butter and milk. Remove from heat and add enough powdered sugar to make runny but spreadable. Add 1/2 teaspoon vanilla. Keep pan over warm water to keep frosting soft. If it gets thick, add a little hot water. Frost cookies while they are warm.


Makes 6 dozen


TIP: This is a good way to use those last two bananas nobody will eat.
