In a deep pot, heat the oil and saute the onion and tomatoes for 3 to 4 minutes. Stir in the shredded chicken. Add the chicken broth, bring to a boil, lower the heat, and simmer, covered, about 15 minutes. Add salt and pepper to taste. To serve, put into bowls, stir in sour cream, and top with cheese, chips and any garnishes you like !
