5 lbs potatoes, cubed small 1 lg onion, chopped 1 c celery, sliced 1 carrot, diced fine 2 c water 1 can cream of celery soup 1(12oz) can evaporated milk 1 stick real butter 1 tbs parsley 1 tbs (or less) Mrs. dash
Cooking Instructions: Cook potatoes, onion, celery, & carrot in the water. Slowly cook until potatoes are mushy. Do not drain. Add remaining ingredients. Heat thru to serve, do not boil.
Serving Suggestions: for fat free, eliminate butter and use evaporated skim milk.
May also add diced ham or bacon, and/or cheese for a variation
