King Ranch Pie


1 1/2 lbs. Hamburger meat, browned
1 package Taco Seasoning
1 Package Corn Tortillas, cut into strips
1 can Rotel Tomatoes
1 to 2 bags Mexican Style or Taco cheese
(depending on how much you like cheese,
and if you're like me, the more the better!)

Preheat oven to 350. Brown your meat per directions on taco seasoning packet. Mix Rotel tomatoes in with meat. In a small square or round casserole dish (make sure to spray with cooking spray first, cause cheese sticks!), layer ingredients in this order: tortilla strips, meat, cheese, and so on, until you use all meat and tortilla strips. Dump on as much cheese as you like on top of the whole thing and pop it in the oven for about 20 minutes, just long enough
to melt all the cheese and get the tortillas warm.


Best thing about this recipe is that it's quick, easy and you can add anything you like to it,
veggies if you're trying to sneak them in on the kids, pretty much anything added to this works. Added bonus- it freezes well and can be mashed to bits and put in tortillas or put on top of eggs for breakfast.
