If you wanted something similar to the apple/pesto, add finely diced apple and chopped basil to the mix. It you want Italian style, leave out the sage and add fennel seeds.
This was an excellent recipe except I made the following changes I substituted 1/2 tsp garlic for the ginger and used crushed red pepper (I increased it to 1 tsp) I like mine spicy! I actually couldn't tell it wasn't regular pork sausage except there was no fat when I cooked this I had sausage and eggs for breakfast! I was so excited.
