Instructions
In a large bowl, combine rice, cranberries, oranges, walnuts and scallions. Toss to combine.
In a small bowl, whisk together vinegar, oil, salt and pepper. Add dressing mixture to rice mixture and toss to combine. Yields about 2/3 cup per serving.
