Family Coffee Cake

cakes | Community User KYRRIA asked us to lighten up one of her family’s favorite desserts so she can continue enjoying a long-standing culinary tradition without the guilt.





Ingredients


1 serving cooking spray (5 one-second sprays per serving)
2 cup unsweetened applesauce
1 cup sugar
1/2 cup fat-free egg substitute
2 1/2 cup all-purpose flour
1 1/4 tsp baking powder
1 1/4 tsp table salt
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1/4 tsp ground allspice
1 cup fat-free whipped topping





Instructions



  1. Preheat oven to 350ºF. Coat a bundt pan with cooking spray.


  2. Combine applesauce, sugar and egg substitute in the bowl of an electric mixer and mix until thoroughly combined.


  3. Combine flour, baking powder, salt and spices in a medium bowl.


  4. Add flour mixture to applesauce mixture in three additions and mix until completely incorporated.


  5. Pour batter into pan (batter will only come partly up pan) and bake until golden brown, about 45 to 50 minutes. Slice into 16 pieces and serve each slice with 1 tablespoon of whipped topping.







Chef Tips

We renovated Family Coffee Cake by:


  • Swapping the shortening for fat-free egg substitute and applesauce.


  • Reducing the total amount of sugar.
