Lemon Poppyseed Muffins




Makes 1 dozen.

2 cups flour

½ cup sugar

2 tablespoons poppy seeds

1 teaspoon baking powder

1 teaspoon baking soda

¼ teaspoon salt

3 tablespoons vegetable oil

1 teaspoon grated lemon zest

2 tablespoons fresh lemon juice

1 container (8 ounces) lemon low-fat yogurt

1 large egg, lightly beaten

Cooking spray

To prepare oven, muffin pans: Preheat oven to 400 degrees. Coat 12 muffin cups with cooking spray.

To mix muffin batter: In medium-size bowl, combine flour, sugar, poppy seeds, baking powder, baking soda and salt. In another bowl, combine oil, lemon zest, lemon juice, yogurt and egg. Stir well. Add to dry ingredients, stirring just until moist. Spoon batter into muffin cups.

To bake muffins: Bake for 14 minutes or until golden. Remove muffins from pan immediately and place on wire rack to cool.
