*This is so good with steak or roast beef. It's savory and the ultimate comfort food. This recipe can be made with peeled potatoes or unpeeled, your choice
5 large russet baking potatoes (peeled or unpeeled...and sliced into 1/2" discs) 1 cup cottage cheese 1/2 stick butter 1 cup shredded cheddar cheese 1/2 of an onion, diced fine 1 tsp garlic powder Salt and Pepper to taste Paprika
Boil the potatoes in salted water until tender. Drain and mash ligthly, with 2 TBSP of the butter. Salt and pepper to taste Leave some chunks. Stir in the cheese, cottage cheese, onion and garlic powder. Put the mixture into a greased 8x8" baking dish. Dot with butter and sprinkle with Paprika.
