1 cup quick cooking oats 3/4 cup raisins 3/4 cup al purpose flour 3/4 cup sugar 3/4 tsp. salt 1 1/4 tsp. baking soda 1 tsp. cinnamon 1 1/4 cups buttermilk 3 tablespoons vegetable oil 1 1/2 tsp.vanilla Vanilla ice cream, softened
Grease 8-cup pudding mold and its lid. (Or, cut foil to cover 8-cup ring mold with 1 inch overhang; grease both.) Into a large bowl, combine all ingredients except ice cream. Pour into mold and cover. Place mold on trivet in deep kettle. Add boiling water to come halfway up side of mold but not touching cover. Cover and simmer 1 1/2 hours or until toothpick inserted in center comes out clean. Cool for 5 minutes. Loosen pudding and invert onto platter. Serve with ice cream. Serves 10.
