Apple and Bacon Grilled Cheese


*the savory taste of onion and hickory smoked bacon contrast wonderfully with the sweet apple and melted cheese. It may sound odd, but it's fantastic!"

8 slices bread
8 sliceds hickory smoked bacon
8 slices American cheese singles
1 large apple, peeled and sliced thin
1 small yellow onion, sliced into thin rings
butter

In a 400*F oven, cook bacon and onion slices until bacon is crisp and onions are caramalized. Remove and drain on paper towl. When cool enough, chop bacon into smaller pieces. Butter one side of each slice of bread and place 4 slices on griddle or in a heavy skillet over med heat. On each slice of bread layer 1 slice of cheese, 1/4 of the caramalized onions, 2 slices worth of chopped bacon, a few slices of apple and 1 more slice cheese. Top each sandwhich with bread, butter side out. Cook over med heat until bread is toasted and brown. Let is a few minutes before slicing and serving.

Yields: 4 sandwiches
