Golden Peanut Butter Bars

GOLDEN PEANUT BUTTER BARS

If you love "peanut butter", try this twist on the traditional peanut butter cookie.

Servings: Makes 24 to 36 bars

Ingredients

2 cups all-purpose flour
3/4 cup firmly packed light brown sugar
1 egg, beaten
1/2 cup (1 stick) cold butter or margarine
1 cup chopped peanuts
1 (14-ounce) can EAGLE BRAND®® Sweetened Condensed Milk (NOT evaporated milk)
1/2 cup peanut butter
1 teaspoon vanilla extract

Instructions

Preheat oven to 350°. Combine flour, sugar and beaten egg; cut in butter until crumbly. Stir in peanuts. Reserving 2 cups crumb mixture, press remaining mixture on bottom of 13x9-inch baking pan. Bake 15 minutes or until lightly browned.

Meanwhile, with mixer, beat Eagle Brand® with peanut butter and vanilla. Spread over prepared crust; top with reserved crumb mixture.
Bake 25 minutes longer or until lightly browned. Cool. Cut into bars. Store covered at room temperature.
