Hot Peppered Chicken


HOT PEPPERED CHICKEN

Ingredients
1/4 cup (4 tablespoons) butter or margarine, cut into pieces
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
1 (3-pound) fryer chicken, cut up OR 6 (5-to 6-ounce) boneless skinless chicken breasts
*1 1/3 cups (one-half 27-ounce jar) NONE SUCH®® Ready-to-Use Mincemeat
1/4 cup jalapeno peppers or favorite hot pepper
Instructions
Preheat oven to 375°F. In 13X9-inch baking pan, melt butter in oven. Combine flour, salt and pepper in resealable plastic bag. Place 2 pieces of chicken in bag; seal bag and shake to coat completely. Place chicken, skin side down, in prepared pan. Repeat process with remaining chicken pieces. Bake 40 to 45 minutes; remove from oven.
In small bowl, combine NONE SUCH® and peppers. Turn chicken pieces over; carefully remove excess fat from baking pan. Spoon NONE SUCH® mixture over chicken. Return pan to oven and bake an additional 12 to 15 minutes. Serve warm.
