2 tablespoons olive oil 4 1/2 inch thick pork chops 1/2 teaspoon rubbed sage 1/2 teaspoon salt 1/4 teaspoon freshly ground black pepper 2 tablespoons brown sugar 1 tablespoon cornstarch 1/2 cup whole berry cranberry sauce 1 cup apple cider 1 cored and sliced tart apple Heat the olive oil in a large heavy skillet over medium high heat. Rub the spices into the pork chops and place in the skillet. Cook for about 5-6 minutes on each side until the chops are browned and thoroughly cooked. While the chops are cooking, mix together the brown sugar and cornstarch in a small saucepan. Blend in the cranberry sauce and mix until smooth. Place over medium high heat. Slowly mix in the apple cider, stirring constantly. Bring to a boil. Add the sliced apple and reduce to a simmer. Simmer for 2 minutes. Arrange the pork chops on a serving plate and spoon the sauce over the pork, arranging the apple slices around the pork.
