Slow Cooker Chicken Enchiladas

It's been so hot here that I didn't want to heat up the kitchen and I made this today for dinner. My husband, Larry, said it is a deffinate keeper...and gave it the Larry seal of approval!

I didn't use as many tortillas as it said to, probably why it turned out a bit thin, but it was so tasty...really, really good,. I also added a small can of chopped green chilis. The chilis didn't make it hot but gave it a great flavor.

I served this with microwaved refried beans and Uncle Ben's microwave spanish rice. I didn't care for the rice that much...but the other was great. I hope you try this. We give it four thumbs up! Colette
