2 tomatoes, cut into quarters 4 small yellow squash, cut into halves 1 medium zucchini, cut diagonally into 2-inch slices 8 green onions cut into 3-inch pieces ¼ cup vegetable oil 3 tablespoons tequila 1-½ tablespoons Triple Sec 2 tablespoons kosher salt 2 tablespoons chili powder Juice of 2 limes
* Combine tomatoes, yellow squash, zucchini and green onions in bowl; mix well. * Pour mixture of oil tequila, Triple Sec, kosher salt and chili powder over vegetables, stirring to coat. * Grill vegetables over hot coals until tender, turning frequently. * Remove to platter; drizzle with limejuice. * Garnish with lime wedges, fresh cilantro and sliced jalapenos.
