1 tablespoon oil 1 medium onion, chopped 2 (16-ounce) cans baked beans 1/2 cup brewed strong coffee 1/4 cup honey 1/2 teaspoon dry mustard 1/4 teaspoon black pepper
Preheat oven to 350 F. Heat oil in a large skillet over medium heat. Add onion and saute until tender. Transfer onions to a 1-1/2-quart casserole dish or bean pot. Add remaining ingredients; mix well. Bake 45 minutes to 1 hour or until liquid is almost completely absorbed and bean mixture is heated through. Tip: Instead of pouring leftover coffee down the drain, pour it into ice cube trays and freeze. Now you'll have it ready to go when you want to make these baked beans -- or to make iced coffee drinks. As the ice melts, your beverage will not get annoyingly diluted.
