Kansas City BBQ Baked Beans


*After trying to come up with my own bean recipe, this is the one that finally did it. I've used it for years...and it's even better the next day! The trick is to cook it low and slow. If using a slow cooker, pour off a little of the bean juice before mixing together. Coe:

KC BBQ BAKED BEANS

2 large cans pork and beans
1/2 large onion, finely chopped
1/4 cup molasses
1 1/2 cup favorite BBQ Sauce (we prefer Fiorella's Jack Stack or KC Masterpiece)
1 tsp liquid smoke flavoring
1 tsp kosher salt (regular is fine)
6 pieces hickory smoked bacon

In a 13x9x2" baking dish, combine all ingredients, except bacon. Mix well. Top with bacon. Bake, uncovered, in a 300*F oven for three hours or until beans have reduced down and bacon is cooked. If bacon browns too fast cover with foil.

Serves 8-10
