Turkey and Dressing Croquettes in Cranberry Sauce


*These savory little croquettes are perfect when you want the taste of a big holiday meal, without the fuss! I've made these for years and everyone always loves them. Hope you try this one!

TURKEY AND DRESSING ROLLS IN CRANBERRY SAUCE

Croquettes:

1 pound ground turkey
1/3 cup finely diced onion
1 egg
1 package chicken or turkey flavored stuffing mix (including seasoning packet!)
1 teaspoon poultry seasoning
Salt and Pepper
vegetable oil for sauteing

Sauce:

1 can cranberry sauce (whole berry or jellied...whichever you prefer)
3 Tablespoons frozen orange juice concentrate
1/2 cup white wine or sherry

*Preheat oven to 350*F


Combine all ingredients for croquettes together and mix well with clean hands. Form meat mixture into 5-6 little, domed croquettes. In a large skillet, heat oil until hot but not smoking. Brown croquettes, turning them on all sides until evenly browned. Remove to a 9x9" baking dish.

Mix all sauce ingredients and pour over the tops of the croquettes. Cover with foil and bake for 30 minutes, or until croquettes are done inside and no longer pink.

Serves 3-4
