Rice - Vegetable - Meat Casserole


Rice - Vegetable - Meat Casserole


1# ground meat
1 T. butter
1/2 c. raw white rice
1/2 c. sliced onions
1 c. sliced carrots
2 c. sliced potatoes
2 c. tomatoes
salt and pepper


Brown meat in butter. Crumble it as it cooks and season to taste. Place in a 2 qt casserole dish in layers. Meat first, then rice, onions, carrots, potatoes and last tomatoes. Season each layer lightly. Add enough tomato juice or water to show through. Cover and bake at 325*F for 2 hours.
