I made this for DH yesterday and IT ROCKED! You could serve this and no one would ever know it's low carb. I think next time I'll try it with a cream cheese/spinach/onion stuffing. I served it with broccoli and a salad...yummy!
4 boneless, skinless chicken breasts 2 mozzerella cheese sticks (cut in half) 4 slices hickory smoked bacon 2 Tbsp. barbque rub (we use Jack Stack...a KC fav. but any will do) 1 tsp kosher salt 1 tsp pepper 1/2 tsp garlic powder 1/2 tsp poultry seasoning juice of one lemon 3 Tbsp. olive oil
Preheat oven to 325*F Pound chicken breasts between two pieces of plastic wrap or waxed paper (use rolling pin) until pieces are about 1/4" thick. Mix spices on plate and sprinkle on outside of chicken breast. On inside, roll up one piece of cheese. Roll up (tucking in ends so cheese won't leak out), wrap with one piece of bacon and secure with toothpick. Brown in olive oil over med heat until bacon begins to brown. Remove to baking dish and squeeze lemon over chicken. Bake until chicken is done and juices run clear, about 20-25 minutes. Serves 2-4
