4 medium potatoes, sliced 1/4 inch thick 1 Lb boneless, skinless chicken breasts, sliced 1/2 inch thick 2 TBS vegetable oil 1/4 cup prepared honey-Dijon barbecue sauce 1 Tsp dried tarragon
Microwave potatoes 8 to 10 minutes until tender While potatoes cook, in large skillet toss and brown chicken in oil over high heat 5 minutes. Add potatoes; sauté & toss until potatoes are lightly browned. Add barbecue sauce & tarragon; toss until heated through.
