*This recipe is one of my favorites. You don't even have to soak the beans. Cooks all day and is wonderful served with hot cornbread.
1 pound dry great northern or pinto beans 1 medium onion, diced 2 smoked ham hocks (or smoked hog jowl or diced ham if prefered) 1 tsp. liquid smoke flavoring (hickory is best) 1/2 stick butter or margarine A few dashes of Tobasco (if desired) Water to cover beans Salt and Pepper to taste
First, wash and pick through beans in a collander. Be sure all bits of stone and dirt are tossed out, including any "bad" looking beans. Add beans and all ingredients to crock. Cook on high 6-8 hours. Before you are ready to serve, taste broth and add salt and pepper to taste.
I've got this in the Crockpot now, crockin' away! LOL I don't have any liquid smoke flavoring, so I added Country Bob's All Purpose Sauce. (He's giving away a free bottle and <>< Christ is his CEO!). I'll letcha know how it turns out!
