Pour the hot coffee into a large saucepan and stir in the baking chocolate squares. Heat over low heat for 5 minutes or until the chocolate is melted, stirring occasionally. Pour the milk into a microwave-safe container and heat on high for 1 to 2 minutes, or until hot. (You can also heat the milk in another saucepan over medium-high heat until hot, but not boiling.) Add milk and extract to the coffee and chocolate mixture, and stir until well blended. Carefully ladle into 8 mugs. Garnish each serving with a peppermint stick.
Mix coffee, eggnog, 1 tub of the whipped topping and cinnamon in large bowl with wire whisk until well blended. Stir in rum. Refrigerate several hours or until chilled. Top with remaining whipped topping just before serving. Sprinkle with nutmeg. Store any leftover eggnog in refrigerator. Yields 10 (1-cup) servings.
FESTIVE MEXICAN COFFEE 2/3 cup ground coffee (freshly ground, if possible) 3 (3-inch) cinnamon sticks 1/4 cup firmly packed brown sugar 6 cups cold water
Place coffee in filter in the coffee maker's brew basket. Place cinnamon and sugar in empty carafe of the coffee maker and set in place. Add water to coffee maker and brew. When brewing is complete stir coffee mixture until well mixed. Fill mugs, being careful that the cinnamon sticks remain in the pot. Serve with milk and additional sugar, if desired.
Yields 6 (1-cup) servings.
CHOCOLATE-ALMOND COFFEE 1/4 cup ground coffee (freshly ground, if possible) 2 tablespoons sugar 1/4 teaspoon almond extract 2-1/2 cups cold water 2 (1-ounce) squares semisweet baking chocolate, chopped 1 cup half-and-half 1/2 cup thawed whipped topping
Place coffee grounds in filter then place in the brew basket of your coffee maker. Pour sugar and almond extract in empty pot of coffee maker. Add water to coffee maker and brew. While coffee brews, microwave chocolate and half-and-half in medium-sized microwavable bowl on high for 1 to 1-1/2 minutes. Stir after 1 minute and again when completely melted. Add the chocolate mixture to the freshly brewed coffee in pot; stir until well blended. Pour into 4 large cups or mugs. Garnish with whipped topping.
Yields 4 (3/4-cup) servings.
