Apple Salad

 Apple Salad


Ingredients:
1 can (20 oz) of crushed pineapple,
2/3 cups sugar.
1-package (3 oz) lemon or Lime flavored Jell-O. Ann (my wife) uses
the lemon. I use the lime flavored. The lemon is too tangy.
1-Package (8 oz) cream cheese—softened.
1-cup diced unpeeled apples.
½ cup chopped pecans. I use a whole cup---I love pecans
1-cup chopped Celery
1- cup Cool- Whip.
Sounds nasty doesn't it? I though so anyway.
Have all the above prepared before you began cooking.



Directions:
In a  pot (a medium will do), combine pineapple (with the juice) and
sugar, bring to a boil and THEN boil for three (3) minutes (you need
to stir it so it want scorch). Remove from heat.   Add Jell-O-
gelatin; stir until dissolved. Add softened cream cheese and stir
until mixture is thoroughly combined. Ann lets it cool or until she
can touch the boiler AFTER she combines gelatin and cream cheese. I
don't. I proceed with the rest.
Fold in apples, celery, pecans, and cool-whip. Pour into a 9x12
greased or buttered saucepan or better yet, use non-stick cooking
spray. Place in the frig until cold. Cut into squares. Any size that
suits your fancy. I normally cut into 3x3 squares. I know that is
big, but trust me, if you make it any smaller you will only make your
company mad!

Serve on a saucer on a lettuce leaf (if you want to) -and eat
until "the world looks level"!
Oh, by the way, for all you that are on a diet, I use the fat
free/low fat stuff. Taste great!
You see I have the BEST diet plan in the world. I eat when I want to,
as much as I want to, and what I want to. No, I don't loose any wait
but the plan is GREAT!



Number Of Servings:Servings depend on the size of squares cut.
cuttiing 3x3 squares usually gets 12 servings

Preparation Time:2-3 hours
