Seasoning Mixes


 


Pumpkin Pie Spice

1/4 cup ground cinnamon                         1/8 cup ground ginger
1 Tablespoon nutmeg                            1 Tbs ground cloves


 
Greek Seasoning#1

3/4 teaspoon Greek oregano                 1/2 teaspoon ground cumin
1/4 teaspoon paprika                            1/4 teaspoon pepper
1 teaspoon dried minced garlic            pinch salt


Mix all ingredients and store in an airtight container.


 


Greek Seasoning Blend#2

2 t salt                                                2 t dried oregano
1 1/2 t onion powder                            1 1/2 t garlic powder
1 t cornstarch                                1 t pepper
1 t beef-flavored bouillon granules          1 t dried parsley flakes
1/2 t ground cinnamon                         1/2 t ground nutmeg
Combine all ingredients; store in an airtight container. Serve with steaks, pork chops, chicken, or fish. Yield: 1/4 cup.


 


Greek Seasoning Mix#3
4 TBS. Oregano                                   6 tsp. fennel seeds
6 tsp. dried lemon grass                     3/4 tsp. black pepper
Grind herbs to a fine powder, bottle, and label. The above amounts make up about 1/2 cup. Use within 6 months for best flavor release.


 
Faux Mrs. Dash mix

1 c vegetable flakes                                        4 tsp herbs fines
4 tsp parsley                                                          4 tsp sweet paprika
4 tsp black peppercorns                              1 tbsp citric acid powder
1 tsp garlic powder                                               1/4 tsp celery seeds
1-2 sun dried tomatoes (dry, not in oil), cut into slivers
1 tbsp lemon peel or orange peel, dried

Use a coffee or spice mill to grind up everything that is not already ground to a fine grain texture. Makes 1/2 c.  Store in an airtight container

Lemon Pepper Seasoning Mix
Lemon pepper adds a piquant flavor when used on grilled meats.
1 cup ground black pepper                   1/3 cup dried lemon peel
3 Tbsp. coriander seeds                     1/4 cup dried minced onion
1/4 cup dried thyme leaves



Stir all the ingredients together and store in airtight jars.
Attach this to the Jar
:Grilled Lemon Chicken
Serves 4
1/4 cup fresh lemon juice                                1/4 cup extra virgin olive oil
2 tsp. Lemon Pepper Seasoning Mix              6 chicken cutlets
Preheat the broiler or BBQ grill. In a low, flat dish stir together the lemon juice, oil and Lemon Pepper Seasoning Mix. Add the chicken breasts, and marinate in the refrigerator for 30 to 45 minutes. Grill over hot coals or broil for 4 minutes on each side, or until done. Serve hot or at room temperature.


 
Taco Seasoning Mix

2 Tbs dry minced onion                     1/4 cup chili powder
2 Tbs ground cumin                    2 Tbs dry oregano
l tsp. granulated garlic powder
Mix all store in Ziploc Note: I'll 10x's this
To Use:
1 1/2 lb. hamburger
1-2 Tbs depending on how spicy you like it!!!
Brown and serve


 

Taco Seasoning
1/2 cup dried minced onion                     1/4 cup salt
1/4 cup chili powder                                     2 Tbsp cornstarch
2 Tbsp crushed red pepper flakes           2 Tbsp garlic powder
1 Tbsp oregano                                              2 Tbsp cumin
Combine all ingredients. (I personally prefer to run it through the blender to get it to a powder consistency.) I store it in a pint canning jar, but any airtight container will do. Use 2 Tbsp and 1/2 cup water to 1lb browned hamburger. Simmer 10 minutes.
Or, use 2 Tbsp of this mix in any other recipe that calls for 1 taco seasoning packet.

Bread Crumb Mix:
2 cups Dry bread crumbs (tear sliced bread in pieces and toast in oven)
Run this through your food processor to get crumbs
Next Mix in to crumbs


1 tsp. Italian seasoning


1 tsp. Parsley


1 tbls. Parmesan cheese


1/8 cup melted butter (drizzle over mixture, and mix in)


Bake 15-20 minutes at 350 degrees till toasted be sure to stir and keep watch so it doesn't burn ...cool...if you want a smoother mix run it through the processor after it has thoroughly cooled...bag Note: I usually 4 times this recipe.

Idea #2:


2 cups dry GF bread crumbs


mix in 1/4 tsp. Garlic


1/2 tsp basil


1 tsp. Oregano


1/8 tsp. onion powder


1 tsp parsley


1 tbls. parmesan cheese


Mix well, drizzle with 1/8 cup melted butter and mix in, Bake 15-20 min at 350 degrees till toasted keep stirring...cool again run back through if you want a smoother mix...bag and enjoy.


 


 Idea #3:


2 cups dry GF bread crumbs
1/4 tsp. garlic
1/2 basil
1 tsp. oregano
1/8 tsp onion powder
1 tsp. parsley
Mixed it all and bagged it!!
Or 2 cups dryed processed bread crumbs
1 tsp. italian seasoning mix
1 tsp parsley
Mixed and bagged...good shelf life.

Seasoned rice mix:
3 cups long grain rice
6 tsp. beef or chicken bouillon
1/4 cup dry parsley
1/2 tsp. garlic powder
1/4 tsp. thyme
1/4 c. dry minced onion
Mix all and store in Ziploc bag

To Use: Chicken or Tuna Bake:
1 can tuna or 1-2 cups cooked chicken
1 1/2 c. frozen veggies your favorite
1 cup seasoned rice mix
2 cups water
1 can cream of chicken soup (use homemade version to come!!)
Mix all in a baking dish and bake for about 1 hour or till rice is tender at 350 degrees...
To Use: Burger bake:
1 lb. cooked hamburger or shredded beef etc.
1 cup seasoned rice mix
1 can drained mushroom (opt.)
2 cups water 1 can cream of mushroom or beef soup
Mix all well in baking dish and bake 1 hour at 350 degrees or till rice is tender

Jambalaya Mix

1 cup raw long-grain rice
1 tablespoon instant minced onion
1 tablespoon green bell pepper flakes
1 tablespoon parsley flakes
1 bay leaf
2 teaspoons beef bouillon granules
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon thyme
1/4 - 1/2 teaspoon crushed red pepper
Place mix in a decorative Jar or pour in a zip bag. Cut an 18x18 square of satin and one of lace. Place lace on flat surface and top with the satin. Lay the bag of mix inside and gather up all side and tie with ribbon and gift tag with the following recipe. Jambalaya 1 1/2 cups Jambalaya Mix 3 cups water 8 oz can tomato sauce 1/2 cup cooked ham or smoked sausage 1/2 cup cooked shrimp Combine first three ingredients and bring to a boil (in a 6 quart pot) . Reduce heat to simmer; add ham or sausage and cook 20 minutes. Add shrimp and cook 5 minutes more. Remove and discard bay leaf. Makes about 8 Cups
