This is one of my fav recipes, and I can eat about 4 potatoes this way..
1) get enough potatoes (idaho) for you and your family to enjoy. Wash and poke holes in them and microwave until ready to eat. preheat the oven to 350 degrees
2) Cut them in half and allow them to cool enough for you to handle.
3) carefully spoon out the innards, leaving enough "shell" (like a boat) for you to later reinsert the "Guts" of the potatoes.
4) in a large bowl, put a stick of butter (for 4 or 5 idahoes) and enough milk (or half and half) for you to make mashed potatoes. Add shredded cheese (chedder, or 4 cheese/mexican cheese mix) about a handful to the mix. Mash the potatoes, add salt/pepper and spices to taste
5) Put the mashed potatoes back into the potatoes, and cover in cheddar or 4 cheese mix, and top to your liking.
6) cook until the cheese melts and it looks yummy
7) serve hot and enjoy!
