Cream Cheese Topped Pineapple Cake


  This is a wonderful, moist cake and very easy to make!


 


Cream Cheese Topped Pineapple Cake


2 eggs


2 cups sugar


2 cups all purpose flour


1 (20 ounce) can crushed pineapple, undrained


1/2 cup chopped pecans or walnuts


2 teaspoons baking soda


1 teaspoon vanilla


    Preheat oven to 350 degrees. Lightly grease 9x13 baking pan.


Beat eggs in large bowl until light and fluffy. Add sugar and beat


until thick. Stir in flour, pineapple, pecans, baking soda, and vanilla; mix well.


Pour into pan and bake until tester inserted in the middle comes out clean.


Bake 40-45 min.


 


Cream Cheese Frosting


2 cups powdered sugar


1 (8ounce) cream cheese (room temp.)


1/4 cup (1/2 stick) butter (room temp.)


1 teaspoon vanilla


Additional chopped pecans for garnish


Combine powd. sugar, cream cheese, butter, and vanilla;


mix until fluffy. Spread over cooled cake. Top with chopped nuts.
