This is my Mom's recipe...we had it almost every week as a kid (so much so that my Sis can't stand it now...but I love it). It's easy to throw together and is even better the next day. I always serve it with garlic toast and a salad...just like Mom did.
Nova's Jackpot Casserole
1 lb ground beef 1~15 oz can cream style corn 1 can cream of tomato soup 1/2 cup diced onion 1 large bag of egg noodles (cooked according to pkg directions) 2 cups shredded cheddar cheese 2/3 cup sliced black olives
Preheat oven to 350*F
Brown ground beef and onion in a large skillet until meat is cooked, drain fat from pan. Add soup, corn, half of the cheese, drained egg noodles and half of the olives. Mix together. Pour mixture into a 13x9x2" baking dish. Cover with remaining cheese and top with black olives. Bake for 25-30 minutes in a 350*F oven, or until hot and bubbly and cheese is melted but not browned.
