I'm making a nice pot roast in the slow cooker, with potatoes for DH and sweet potatoes for DS and me...also leftover green beans and there is pie left. YUM!
Trying your Slow Cooker Scalloped potatoes and Ham....but tying something different!
First of all using the smoked sausage like you suggested (using Healthy Choice's version...we use it a lot and it is inexpensive) and then to save time this morning....Tuesday mornings are rushed for me...I used WalMart's frozen southern potatoes (basically cubed potatoes) instead of slicing up potatoes. Don't know how it will do. I'll let you know how it turns out!

So ... what's the verdict?
We had leftovers from last night except for the apple fritters. DH brought home a gift of Carrot Cake slices from someone at his work - so we had that for 'sert. Mmm mmm good!

It turned out quite well. The only problem was my slow cooker cooks soooo hot that low is too hot for all day so my potatoes ended up looking like mashed potatoes! But it was still a great hit!!!! They loved it!!!!!!
