Buffalo Beyond Winter and Wings


INGREDIENTS:

4 cups flour
4 eggs
1 teaspoon nutmeg
1/2 teaspoon salt
8 to 10 Tablespoons water 

TO PREPARE:

Mix the flour, eggs, nutmeg and salt in a bowl with a
  wooden spoon.  Add the water gradually, stirring until
  mixed; dough should be thick and stretchy.
Place a small amount of the dough on a damp wooden board;
  cut into slivers with a knife.
Drop the dough slivers in small batches into boiling water
  in a stockpot.  Cook until the spatzle floats to the
  surface; remove with a slotted spoon to a heated bowl.
  Repeat the process in batches with the remaining dough.
May be served plain with butter and parsley or in your
  favorite sauce.
