Fish Paprika

from the Houston Junior League Cookbook


INGREDIENTS:

2 – 3 medium onions, sliced
1 – 3 teaspoons paprika
1/4 cup butter
1 fish (about 3 pounds)
1 lemon
  Salt and pepper
1/8 teaspoon rosemary
1/4 cup (or more) sherry
1/2 cup sour cream
  Minced parsley

TO PREPARE:

Saute onions with 1/2 teaspoon (or more) paprika in half the butter until onions are golden.  Remove skin from fish and rinse in lemon water.  (Squeeze 1 lemon into 1 quart water.)  Place in well-buttered baking dish.  Dot with remaining butter; sprinkle with salt, pepper, rosemary, 1/2 teaspoon paprika and sherry.  Arrange onions over fish.  Spread sour cream over all.  Bake at 375 degrees for 30 minutes , basting occasionally with pan juices.  When fish flakes easily, place under broiler to brown.  Sprinkle with parsley and paprika.

SERVES:  4 - 6
