1 1/2 cups raw white rice, unwashed 1 1/2 tsp. salt 3 1/2 cups boiling water butter curry powder (optional)
Spread rice in a shallow baking pan and bake in 400 degree oven for 30 minutes or until golden brown, stirring occasionally. (Don't worry, it smokes a little bit.)
Put browned rice in a strainer and run cold water through it, then put it into a 1 1/2 quart casserole. Add salt and boiling water. Cover. Bake in 400 degree oven for 25 minutes. Remove cover and fluff up with a fork. Just before serving add a generous amount of butter and a sprinkling of curry powder. Serve from casserole.
