Metric Ingredient Imperial 750 ml sugar 3 cup 175 ml shortening 3/4 cup 1 L sweet onions, grated 4 cup 375 ml applesauce 1 1/2 cup 375 ml buttermilk 1 1/2 cup 1.3 L flour 5 1/4 cup 15 ml baking soda 3 tsp 7 ml baking powder 1 1/2 tsp 1 ml fresh ground pepper 1/4 tsp 3 ml nutmeg 3/4 tsp 15 ml cinnamon 3 tsp 7 ml cloves 1 1/2 tsp 375 ml pecans, chopped 1 1/2 cup 250 ml raisins 1 cup
- FROSTING - 500 ml powdered sugar 2 cup 250 ml creamy peanut butter 1 cup 40 ml skim milk 3 tbsp 7 ml butter 1 1/2 tsp -------------------------------------------------------------------------------- Directions In a bowl; cream together sugar and shortening. Fold in onions and applesauce; add buttermilk. In a medium bowl; sift dry ingredients together. Fold into onion batter. Add nuts and raisins.
Pour batter into lightly geased 3 x 9 inch (23 cm) round cake pans and bake in preheated 350 F (180 C) oven for 45 minutes. Cool on rack. Spread layers with frosting and stack.
FROSTING: In a small bowl; mix all ingredients until smooth and fluffy.
