Quick Crunchy Baked Chicken


*I personally have not tried this, but it looked good and easy, so thought I'd post for those interested.  I'll have to try it myself.


Use any kind of chicken you want, boneless,cut up fryer parts or whatever.  I usually cook about 1 1/2 pounds for 2-3 people so adjust for the size of your family.  One medium sized bag of flavored potato chips will work for that amount.I  skin the chicken and rub a little olive oil
on it before rolling it in crunchies.  Open the bag of chips and let the air out, then securely roll it back up and crush the potato chips into very small pieces. Then put one or two pieces of chicken in the bag and shake it until it's all covered in chips.

Repaeat until all chicken is covered and place the pieces on a lightly oiled pan and bake at 350 degrees for about 40 minutes (adjust for the amount of chicken you cook) or until it's
thoroughly cooked insided. 


You can choose barbecue, sour cream or whatever flavor your family likes. The kids get a charge out of helping crush the potato chips too.
