JELLY MUFFINS


PAM spray for mufin tins

2 cups whole wheat flour
1 cup quick cooking oats
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup plus 2 TBSP skim  milk
3/4 c plus 2 TBSP unsweetened applesauce
1 cup brown sugar, packed
1/3 c canola oil
1 large egg, beaten
2 tsp vanilla extract
jelly or jam of your choice

1 heat oven to 400 degrees F. 2 mix the first 5 ingredients in a medium bowl and then mix the rest in a separate bowl, EXCEPT for the jelly. 3 Combine all ingredients, but do not overmix!
4 Fill muffin cups (after you have sprayed them with PAM!) about 1/3 full. Drop 1 tsp of jelly on top, then cover with batter til muffin cup is full. Bake the about 20-23 mins, cool 10 mins and
then remove form tin to cool fully.
