Yummy Meatball Spinach Soup (2pts)


*I am doing Core, so I used 1/2 cup of oatmeal instead of the crackers to make it a core recipe. The meatballs turned out great, so if you want to use oatmeal it's good. This soup is amazing, very flavorful! I hope you try it!Colette

1/2 lb lean ground beef
1 cup chopped onin, divided
3 cloves garlic, minced, divided
2 tp dried oregano leaves, divided
20 Saltine crackers, finely crushed * (or 1/2 c. oatmeal for Core Program)
2 egg whites
1 tsp olive oil
2 cans (14 oz each) reduced sodium beef broth
1 can (14.5 oz) stewed tomatoes, undrained
1 pkg. (10 oz) frozen chopped spinach, thawed and well drained

Combine meat, 1/4 cup of the onion, 1/3 of the garlic and 1/2 tsp of the oregano in a large bowl. Add cracker crumbs (or oatmeal*) and egg whites; mix well and form into 1" meatballs, set aside. Cook remaining 3/4 c. onion, garlic in hot oil in a Dutch oven on med-high heat for 3 to 5 minutes or til onion is tender. Add broth, tomatoes with their liquid, oregano, spinach, bring to boil. Add meatballs. Cover and simmer on low heat for 20 to 25 minutes, until meatballs are cooked through.

Serves 7
