Three Poppyseed Dressings


*If you are concerned about eating raw egg...substitute pasturized eggs for the regular egg in the recipe. Unpasturized raw eggs should not be eaten by pregnant women, children or those with compromised immune systems.

Poppy Seed Dressing I


 
1 egg
1/4 cup sugar
1/4 cup lemon juice
1 teaspoon dry mustard
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon salt
1 1/2 cup vegetable oil
1/4 cup honey
1 tablespoon poppy seeds

1. Combine first 7 ingredients in electric blender, blending well. Remove center of lid and while machine is running, slowly pour oil into mixture until completely combined and emulsified.
2. Add honey and mix well.
3. Remove mixture from blender and stir in poppy seeds. Chill.

Makes 2 cups.


Poppy Seed Dressing II
 
1 1/2 cups sugar
3 teaspoons powdered mustard
2 teaspoons salt
2/3 cup cider vinegar
2 cups vegetable oil
3 tablespoons poppy seeds

1. In a food processor or blender pulverize the sugar. Add the mustard, salt and vinegar to the sugar and mix.
2. With the machine running slowly add the oil to the sugar mixture.
3. Remove mixture from the machine and stir in the poppy seeds. Chill.

Makes 1 quart dressing.


Poppy Seed Dressing III
 
1 egg
1/4 cup sugar
1 tablespoons Dijon-style mustard
2/3 cup red wine vinegar
1/2 teaspoon salt
3 tablespoons grated yellow onion
2 cups vegetable oil
3 tablespoons poppy seeds

1. In food processor or blender, blend egg, sugar, mustard, vinegar, salt and onion for 1 minute. With processor running, drizzle oil and blend until thickened.
2. Remove mixture from blender and stir in seeds.

Makes 2 1/4 cups dressing.
