Several Snack Mix Recipes!


*I don't know about you all, but around my house the traditional making of "THE MIX" is a yearly event...usually in the fall and all through the holidays. Every woman in the family has her own special version...and boy...are they good! Here are several mix recipes that you can enjoy anytime of the year...and they are so much more healthy than chips or other snacks. Enjoy! Coe


THE ORIGINAL CHEX PARTY MIX



The Original Chex Party Mix has been a hit for almost half a century. Generations of kids have grown up looking forward to it at the holidays and any other time it was around - and when they grew up, they made it with their own kids. And you can too. We’ve thought of ways to include your kids in making Chex Party Mix and preparing for holiday gatherings. Let your kids help with the mixing and measuring, and they’ll be sure to have memories that last long after all that delicious mix is gone.

1 cup mixed nuts
1 cup pretzels
1 cup garlic-flavor bite-size bagel chips or regular-size bagel chips, broken into 1-inch pieces
3 cups Corn Chex® cereal
3 cups Rice Chex® cereal
3 cups Wheat Chex® cereal
6 tablespoons margarine or butter*
2 tablespoons Worcestershire sauce
3/4 teaspoons garlic powder
1 1/2 teaspoons seasoned salt
1/2 teaspoon onion powder

Heat oven to 250. Melt margarine in large roasting pan in oven. Stir in seasonings. Gradually stir in remaining ingredients until evenly coated. Bake 1 hour, stirring every 15 minutes. Spread on paper towels to cool. Store in airtight container. 12 cups snack.

*Do not use spread or tub products

Microwave Directions: Melt margarine in large microwavable bowl uncovered on High. Stir in seasonings. Gradually stir in remaining ingredients until evenly coated. Microwave uncovered on High 5 to 6 minutes, thoroughly stirring every 2 minutes. Spread on paper towels to cool. Store in airtight container.

Important: Because microwaves cook differently, time is approximate.

LOWFAT ORIGINAL CHEX PARTY MIX

Some things stay the same over time, like the great taste of the Original Chex Party Mix. Some things change, like our awareness of fat in our diets. Certainly, treats can be enjoyed in moderation in any balanced diet. But for people who want the great taste but less of the fat, we have created this modified version of the original recipe. Removing the nuts, reducing the margarine and using fat-free bagel chips reduces the fat in this recipe. So feel free to enjoy guilt-free snacking at your next party.

3/4 teaspoon garlic powder
1 cup pretzels
1 1/2 teaspoons seasoned salt
3 cups Rice Chex® cereal
3 cups Corn Chex® cereal

HOT AND SPICY CHEX MIX



This modified version of the Original Chex Party Mix will be enjoyed by anyone who likes a little more zip to their food. The addition of red pepper sauce and cheese crackers adds a new dimension - not to mention a spicy bite - to the classic recipe. Try serving it with other spicy foods to bring a little kick to your party.

3 cups Corn Chex® cereal
3 cups Wheat Chex® cereal
1 cup pretzels
1 tablespoon Worcestershire sauce
2 to 3 teaspoons red pepper sauce
3 cups Rice Chex® cereal
1 cup mixed nuts
1 cup bite-size cheese crackers
1/4 cup margarine or butter*
1 1/4 teaspoons seasoned salt

Heat oven to 250°. Melt margarine in large roasting pan in oven. Stir in seasonings. Gradually stir in remaining ingredients until evenly coated. Bake 1 hour, stirring every 15 minutes. Spread on paper towels to cool. Store in airtight container.

This is just the snack for barbecue lovers. Chex Barbecue Snack Mix has the sweet, tangy flavor of barbecue sauce, combined with cheese crackers and honey roasted peanuts to complete this rich, savory snack. Because it's made in the microwave, you can whip up a batch in 20 minutes or less, and it's easy to let kids help with the mixing and stirring.

3 cups Rice Chex® cereal
3 cups Corn Chex® cereal
1 1/2 cups pretzel twists
1 1/2 cups bite-size cheese crackers
3/4 cup honey-roasted peanuts
1/2 cup barbecue sauce
1 tablespoon vegetable oil
3/4 teaspoon onion powder
3/4 teaspoon garlic powder

Stir together cereals, pretzels, crackers and peanuts in large microwavable bowl; set aside. Stir together remaining ingredients until blended. Pour over cereal mixture in bowl, stirring until evenly coated. Microwave uncovered on High 10 minutes, stirring every 3 minutes. Spread on aluminum foil or paper towels to cool. Store in airtight container. 7 1/2 cups snack.

HONEY ROASTED CHEX MIX




Perfect for the honey lover in your family, this recipe uses Honey Nut Chex cereal, honey roasted peanuts and other delicious ingredients to create a one-of-a-kind taste. It's also relatively low in fat, so you and your family can indulge your sweet tooth. Let your kids join in mixing ingredients and breaking the snack apart after it cools, then enjoy.

3 cups Honey Nut Chex® cereal
2 cups Cheerios® cereal
1 1/2 cups Bugles® original flavor snacks
1 cup pretzels or 1/2 cup honey-roasted peanuts
2 tablespoons light corn syrup
2 tablespoons honey
1 tablespoon margarine or butter*
1/2 teaspoon vanilla

Heat oven to 325°. Mix cereals, snacks and pretzels in large bowl; set aside. Heat corn syrup, honey and margarine to boiling in 1-quart saucepan over medium heat, stirring occasionally. Remove from heat; stir in vanilla. Pour over cereal mixture in bowl, stirring until evenly coated. Spread in ungreased 15 1/2-inch baking pan with sides.* Bake 20 minutes, stirring after 10 minutes. Spread on waxed paper or aluminum foil; cool completely. Break into bite-size pieces. Store in airtight container. 7 1/2 cups snack.

*A rectangular pan, 13x9x2 inches, can be used instead. Bake 24 minutes, stirring after 12 minutes.

MUDDY BUDDIES




This crowd-pleasing snack takes only minutes to make, and is so simple that kids can take part in every step. You may have heard it called 'Puppy Chow' or 'White Chocolate Chex', but whatever you call it, it's delicious. Combining chocolate, peanut butter and Chex® cereal, this is the perfect spur-of-the-moment family treat.

1 teaspoon vanilla
1 1/2 cups powdered sugar
1/2 cup Skippy® peanut butter
1 package (6 ounces) semisweet chocolate chips (1 cup)
1/4 cup margarine or butter*
9 cups Chex® cereal (any variety)

Measure cereal into large bowl; set aside. Microwave chocolate chips, peanut butter and margarine in 1-quart microwavable bowl, uncovered on High 1 minute; stir. Microwave 30 seconds longer or until mixture can be stirred smooth. Stir in vanilla. Pour chocolate mixture over cereal in bowl, stirring until evenly coated. Pour into large plastic food-storage bag; add powdered sugar. Seal bag; shake until well coated. Spread on waxed paper to cool. Store in airtight container in refrigerator. 9 cups snack.

Range Top Directions: Measure cereal into large bowl; set aside. Heat chocolate chips, peanut butter and margarine in 1-quart saucepan over low heat, stirring frequently, until melted. Remove from heat; stir in vanilla. Continue as directed above.

3/4 cup packed brown sugar
6 tablespoons margarine or butter*
3 tablespoons light corn syrup
1/4 teaspoon baking soda
4 cups Corn Chex® cereal
4 cups Rice Chex® cereal
1/4 cup semisweet chocolate chips

Cover cookie sheet with waxed paper. Microwave brown sugar, margarine and corn syrup in large microwavable bowl uncovered on High 1 to 2 minutes, stirring after 1 minute, until margarine is melted. Stir in baking soda until dissolved. Stir in cereals. Microwave on High 3 minutes, stirring every minute. Spread on cookie sheet. Cool 10 minutes; break into bite-size pieces.

Microwave chocolate chips in small microwavable bowl on High 1 minute 30 seconds or until chocolate can be stirred smooth (bowl will be hot). Drizzle chocolate over snack. Refrigerate 30 minutes or until chocolate is set. Store in airtight container. 8 cups snack.

For pretzel or peanut lovers: Stir in 1 cup broken pretzels or 1/2 cup honey-roasted peanuts with the cereal.

Make Caramelized Crispy Snack Mix part of your party memu and give everyone in the family something to look forward to.

9 cups Rice Chex® cereal
9 cups Corn Chex® cereal
2 cups packed brown sugar
1 cup LAND O LAKES® Butter or Margarine
1/2 cup light corn syrup
1/2 teaspoon baking soda
2 cups candy-coated milk chocolate pieces

1. Heat oven to 250°F. Spray roasting pan with cooking spray. Place cereals in pan.
2. In 3-quart saucepan, mix brown sugar, butter, corn syrup and salt. Cook and stir 8 to 9 minutes over medium-high heat until mixture comes to a boil. Boil 1 minute, stirring constantly. Remove from heat. Stir in baking soda. Pour over cereal in pan; stir gently until well coated.
3. Bake 40 to 50 minutes, stirring every 15 minutes, until coating is set. Cool 5 minutes; stir in candy-coated milk chocolate pieces.
4. Spread mixture onto waxed paper. Cool 10 minutes. Break cooled snack mix into pieces. Store in container with tight-fitting lid.
 
18 cups snack.
