Fabulous Mashed Potato Recipes (Several)


MAKE AHEAD MASHED POTATOES

The sun-dried tomato butter which flavors these potatoes is very versatile - also may be used for baked potatoes, pasta or breads.
Preparation 30 min.  
Cooking 15 min.  
Chilling 4 hrs.  
Microwaving 15 min.  

Sun-dried Tomato Butter Ingredients:

*  1/2 cup LAND O LAKES® Butter, softened
*  2 tablespooons finely chopped oil-packed sun-dried tomatoes, drained
*  1 tablespoon thinly sliced green onions
*  1 teaspoon finely chopped fresh garlic
*  1/4 teaspoon salt

Potatoes Ingredients:

*  8 cups (about 4 pounds) peeled potatoes, cut into 1-inch pieces
*  2 teaspoons salt
*  1 (3-ounce) package cream cheese, softened, cut into chunks
*  3/4 cup milk
*  Paprika and chopped parsley, if desired

Instructions:

Combine all sun-dried tomato butter ingredients in small mixer bowl. Beat at medium speed until well mixed.
Place potatoes in 4-quart saucepan or Dutch oven. Cover with water; add 2 teaspoons salt. Bring to a boil over high heat. Reduce heat to medium. Cook potatoes until fork tender (15 to 18 minutes). Drain.
Place potatoes in large mixer bowl. Mash potatoes on low speed. Increase speed to medium. Beat, gradually adding cream cheese, 1/4 cup milk and sun-dried tomato butter until smooth (1 to 2 minutes). Place potatoes in 3-quart microwave-safe casserole. Cover; refrigerate 4 hours or overnight.
Just before heating, pour remaining 1/2 cup milk over potatoes. Cover; microwave on HIGH for 15 to 18 minutes, stirring every 5 minutes, until heated through. Let stand 10 minutes. Sprinkle with paprika and chopped parsley.
TIP: Sun-dried Tomato Butter can be made up to 5 days ahead. Let soften about 30 minutes at room temperature before using. This butter is delicious on bread or tossed with pasta, vegetables, etc.
OVEN DIRECTIONS: Heat oven to 325°F. Prepare potato mixture as directed. Just before heating, pour remaining 1/2 cup milk over potatoes. Cover; bake for 30 minutes. Stir; continue baking for 20 to 30 minutes or until heated through.
Yield: 10 servings

TOASTED ONION MASHED POTATOES

Nothing beats the flavor and aroma of sautéed onions and butter -- these potatoes are a great addition to a homestyle dinner or a Thanksgiving holiday meal.
Preparation 10 min.  
Cooking 23 min.  

Ingredients:

*  5 medium (about 10 cups) potatoes, cut into eighths
*  Water
*  2 teaspoons salt
*  2 tablespoons LAND O LAKES® Butter
*  3 cups coarsely chopped onions
*  2 tablespoons cold LAND O LAKES® Butter
*  1/2 cup warm milk
*  3/4 cup LAND O LAKES® Sour Cream

Instructions:

Place potatoes in 4 1/2-quart saucepan or Dutch oven. Cover with cold water; add salt. Bring to a boil over high heat. Reduce heat to medium; boil potatoes until fork tender (15 to 18 minutes). Drain.
Meanwhile, melt 2 tablespoons butter until sizzling in 10-inch nonstick skillet; add onions. Cook over medium heat, stirring occasionally, until onions are brown (8 to 10 minutes). Set aside.
Place cooked hot potatoes in large bowl. Mash slightly with fork. Beat at medium speed, adding cold butter 1 tablespoon at a time, until mixed. Continue beating, gradually adding browned onions and all remaining ingredients until well mixed. Add salt and pepper to taste. (DO NOT OVERBEAT.) Serve immediately.

These homemade mashed potatoes are loaded with flavor, yet light and fluffy.
Preparation 15 min.  
Cooking 21 min.  

Ingredients:

*  5 medium (10 cups) potatoes, each cut into eighths
*  6 cups cold water
*  2 teaspoons salt
*  2 large (3 cups) onions, finely chopped
*  1 1/2 cups vegetable broth
*  6 tablespoons LAND O LAKES® Light Butter
*  3/4 cup LAND O LAKES® Light Sour Cream
*  1/4 teaspoon pepper

Instructions:

Place potatoes in 4-quart saucepan. Add water and salt. Cover; bring to a boil over high heat (7 to 10 minutes.) Reduce heat to medium. Cook until potatoes are fork tender (15 to 18 minutes). Drain. Keep warm.
Meanwhile, combine onions and 1 cup broth in 10-inch nonstick skillet. Cook over medium heat, stirring occasionally, until onions are softened and broth is absorbed (15 to 18 minutes).
Increase heat to medium-high; add 2 tablespoons light butter. Cook until onions are browned (6 to 8 minutes).
Place hot potatoes in large mixer bowl; mash slightly with fork. Beat at medium speed, adding remaining light butter, 1 tablespoon at a time, and mixing well after each addition. Add cooked onions, remaining broth, light sour cream and pepper. Continue beating until well mixed. DO NOT OVERBEAT. Serve immediately.

Cream cheese, sour cream and green onions turn ordinary mashed potatoes into extra special mashed potatoes.
Preparation 20 min.

Ingredients:

*  4 pounds potatoes, peeled, quartered
*  2 cups LAND O LAKES® Sour Cream
*  1 cup milk
*  1/4 cup LAND O LAKES® Butter, softened
*  1/4 cup chopped green onions
*  2 (3-ounce) packages cream cheese, softened
*  1/2 teaspoon pepper
*  1/2 teaspoon salt

Instructions:

Place potatoes in 4-quart saucepan; add enough water to cover. Cook over medium heat until fork tender (25 to 35 minutes); drain.
Combine cooked potatoes and all remaining ingredients in large mixer bowl. Beat at medium speed, scraping bowl often, until potatoes are smooth and creamy (2 to 3 minutes).

Preparation 30 min.

Baking 50 min.  

Potatoes Ingredients:

*  8 cups (about 4 pounds) peeled potatoes, cut into 1-inch pieces
*  2 teaspoons salt
*  3/4 cup milk
*  1/2 cup LAND O LAKES® Butter, softened
*  1 (3-ounce) package cream cheese, softened, cut into chunks

*  Paprika, if desired
*  Chopped fresh parsley, if desired

Instructions:

Place potatoes in 4-quart saucepan. Cover with water; add 2 teaspoons salt. Bring to a boil over high heat. Reduce heat to medium. Cook potatoes until fork tender (15 to 18 minutes). Drain.
Place potatoes in large mixer bowl. Mash potatoes on low speed. Increase speed to medium. Beat, gradually adding 1/4 cup milk, butter and cream cheese until smooth (1 to 2 minutes). Place potatoes in 3-quart casserole. Cover; refrigerate 4 hours or overnight.
Heat oven to 325°F. Pour remaining 1/2 cup milk over potatoes. Cover; bake for 30 minutes. Stir; continue baking for 20 to 30 minutes or until heated through. Sprinkle with paprika and chopped parsley, if desired.

Roasted garlic adds gourmet flavor to these absolutely delicious potatoes.
Preparation 15 min.  
Cooking 24 min.  

Ingredients:

*  5 medium-sized potatoes, peeled, cut into eighths
*  1 teaspoon salt
*  1/2 cup warm milk
*  6 tablespoons LAND O LAKES® Butter, softened
*  1 teaspoon purchased prepared roasted garlic
*  Salt
*  Pepper

Instructions:

Place potatoes in 4-quart saucepan or Dutch oven. Add enough water to cover; add 1 teaspoon salt. Bring to a boil over high heat (7 to 9 minutes). Reduce heat to medium. Cook until potatoes are fork tender (15 to 18 minutes). Drain.
Place potatoes in large mixer bowl. Add milk, butter and garlic. Beat at medium speed until smooth (2 to 3 minutes). Season with salt and pepper.
TIP: To roast fresh garlic: Heat oven to 350°F. Cut 1/4 to 1/2 inch from top of garlic bulb to expose cloves. Remove most of outer skin from bulb, leaving bulb intact and cloves unpeeled. Place bulb, cut-side up, on 8-inch piece aluminum foil. Drizzle with 1 teaspoon olive oil; sprinkle lightly with salt and pepper. Wrap in foil. Bake for 45 to 55 minutes or until softened. Cool slightly. Separate the cloves and press cloves slightly to squeeze out softened garlic. Use roasted garlic in recipes or spread on French bread.

SMASHED POTATOES WITH STIR INS

Flavorful additions give skin-on mashed potatoes a new personality!
Preparation 10 min.  
Cooking 15 min.  

Ingredients:

*  2 pounds (4 cups) medium red potatoes, washed, cut into quarters
*  1 teaspoon salt
*  Water
*  1 cup LAND O LAKES® Fat Free Half & Half
*  1/4 cup LAND O LAKES® Butter, cut into 4 pieces
*  1/4 cup LAND O LAKES® Sour Cream
*  1/2 teaspoon salt
*  Pepper, if desired

Instructions:

Place potatoes and 1 teaspoon salt in 3-quart saucepan; cover with water. Cook over high heat until water comes to a boil; reduce heat to medium. Cook until potatoes are tender (15 to 20 minutes). Drain potatoes; return to saucepan.
Meanwhile, heat half & half in 1-quart saucepan just until warm.
Add butter to potatoes; mash potatoes until about two-thirds are mashed and one-third remain lumpy. Gradually add half & half to potato mixture; mix well. Stir in sour cream, 1/2 teaspoon salt and pepper, if desired. Serve immediately.
TIP: Buy potatoes that are firm and smooth. Avoid potatoes that are withered, wrinkled or have sprouting eyes. Make sure brown spots and blossom ends are trimmed from potatoes, even though they are not peeled. Cut off any green areas as they will taste bitter when cooked.
VARIATIONS:
Ranch S’mashed Potatoes: Omit 1/2 teaspoon salt. Stir in 2 tablespoons dry ranch dressing mix and 1/4 cup chopped green onions with the sour cream.
Chipotle, Green Chili & Cheddar S’mashed Potatoes: Stir in 1 teaspoon chopped chipotle chile in adobo sauce, 1 (4-ounce) can well-drained diced green chiles and 1 cup shredded LAND O LAKES® Cheddar Cheese.
Caramelized Onion & Swiss Cheese S’mashed Potatoes: Stir in 1/2 cup caramelized onions and 1 cup shredded LAND O LAKES® Swiss Cheese. To caramelize onions: Melt 3 tablespoons butter in 12-inch nonstick skillet until sizzling; add 2 cups sliced onions. Cook over medium heat, stirring occasionally, until onions are deep golden brown (15 to 20 minutes).
Roasted Garlic & Buttermilk S’mashed Potatoes: Substitute 3/4 cup buttermilk (do not heat) for the half & half. Stir in mashed pulp from 1 bulb roasted garlic. To roast garlic: Heat oven to 350ºF. Remove some of papery skin from outside of garlic bulb without separating cloves. Cut off top 1/2 inch of garlic bulb. Place bulb in 8-inch square piece of heavy-duty aluminum foil; drizzle with 1 teaspoon olive oil. Wrap tightly in foil. Bake for 45 to 50 minutes or until garlic is soft and tender. Cool 15 minutes. Carefully separate cloves. Squeeze out pulp; mash.
Yield: 6 (2/3-cup) servings
