1 onion, chopped 1/2 cup chopped celery 2 tablespoons vegetable oil 1/2 pound chicken giblets, chopped 2 cups chicken broth 1 teaspoon salt 1/4 teaspoon pepper 1 cup raw rice
Lightly brown onion and celery in vegetable oil, add giblets and cook a few minutes. Add remaining ingredients, bring to boil. Cover, cook very slowly 30 minutes or until rice is done. Fluff rice with fork. 4 to 6 servings.
